Black Bean Tacos

I love just about anything that comes with avocado and salsa on it!

 When I find a new recipe I want to try I "pin it" to one of my Pinterest boards. Once I have tried it, if I love it, then I move it to my "Tried It, Loved It" board. I like things simple ;)

This recipe is so easy and the tacos reheat really well. 

Ingredients:

  • 2 C. black beans, cooked
  • 1/2 C. red onion, minced
  • 1 tsp. cumin
  • 1 tsp. paprika
  • 2 Tbsp. cilantro, chopped
  • 4-6 ounces pepper jack cheese, grated
  • 2 Tbsp. olive oil
  • 1 avocado
  • salt & pepper
  • 8 corn tortillas
  • salsa

In a medium bowl add the beans, onions and spices. Mash together.

Using a pan or griddle, heat to medium low, add a little olive oil. Place the tortillas on the griddle to heat. Flip the tortillas then add the bean mixture and cheese. Fold the tortilla in half and pat it down gently. Cook until tortilla is brown then flip to other side. Top with avocado and salsa! So good...
